Gluten (from Latin gluten, "glue") is a protein composite found in wheat and related grains, including barley and rye. Gluten gives elasticity to dough, helping it rise and keep its shape and often gives the final product a chewy texture.
It adds the yumminess to bread, pizza, pasta, beer. Some people, and I feel sorry for them, cannot eat gluten or it makes them ill. These people have coeliac disease. There is a test for coeliac disease. If you suspect that you have coeliac disease see your doctor and book a test.
